  • 2 Changes on the Market of Frozen Fruits and Vegetables – Bożena Nosecka
    • In the nearest future the domestic and international demand for Polish frozen fruits and vegetables will increase. The demand on international markets for frozen raspberries and strawberries will grow too. The growth of exports of remaining kinds of frozen fruits will be lower due to distinct saturation of markets. The domestic demand for frozen fruits will also increase due to higher demand of enterprises producing jams and dairy products. Despite of the increase of subsidies from the EU, in the nearest future the supply and prices will be highly changeable on the market of frozen fruits.

  • 8 Sector of Cereals and Feed-stuffs Production in Poland and European Union – Agnieszka Judzińska
    • Poland is one of the main producer of cereals and cereal based products in the European Union. The domestic grain sector has large production capacity and at the same time it is a major consumer of grain products. Comparing with other European countries Poland has low yields and little share in European trade with third countries. Being a member of Common market a beneficial effect on the development and competitiveness of whole grain sector in Poland is secured.

  • 13 Food Industry in New Member States of European Union – Robert Mroczek
    • Compared to the UE-15 countries the new member states are in majority small and medium size. The share of food industry together with agriculture in GDP in separated states of the EU-12 differs and amounts to from between ten and twenty per cent in Bulgaria and Romania to about 2% in Slovenia. The net exporters of the agro-food products among the New Member States are only Poland, Hungary, Bulgaria and Lithuania. Nevertheless, in the above-mentioned group of countries, only Poland has strengthened its position of the net exporter of the food and beverages. That resulted in the increase of the positive trade balance from about 200 million euro (an average of the years 2001-2003) to 2 billion euro in 2006, i.e. tenfold.

  • 18 Ammonium as a Safe Cooling Agent – Urszula Stęplewska, Krzysztof Maćkowiak, Paweł Kuleta
    • The uncontrolled ammonia releases have the potential to be dangerous for people and food products and may cause fire and explosion. By using the adequate control systems ammonia can be safe refrigerant. The continuously working systems that control properly the concentration of (gaseous) ammonia fumes in the air are very important safety factor for the buildings with ammonia installations. In the event of the ammonia release detection, the system should start automatically and prevent the creation of ammonia concentration, dangerous to human health and life, moreover the system should prevent exceeding the lower explosive limit and start emergency ventilation.

    • The article describes temperatures proper for perishable foodstuff transporting. It also shows consequences of improper temperatures during transport. Specyfication of refrigeration bodies clasification according to ATP agreement, certyfication analysis is included. The registration of temperature during food transport is stressed.

  • 36 Polyphenols in Food. Antioxidant Properties – Marta Mitek, Andrzej Gasik
    • Classification and content of polyphenol compounds in food is presented in this study. Antioxidant activity, examined with the use of in vitro and in vivo methods, of chosen polyphenols was also compared. On the basis of the results of in vivo examination, the influence of diet rich in polyphenols on antioxidant potential of human plasma was estimated.

  • 42 Nutrigenomics – New Perspectives in the Science of Human Nutrition – Justyna Gralik
    • The science domain, which investigates the influence of nutrients on diseases’ incidences and their interactions with genetic factors is nutrigenomics. Dynamic development of nutrigenomics is possible due to applying new bioanalytical techniques characterized by miniaturization and automatisation of measurement processes, with parallel recording of hundreds or thousands bites of information and applying of elaborated electronic tools used in results’ analysis. The future purpose of nutrigenomics is preparation of individual strategies of nutrition which prevent diseases and improve health status of people.
