  • 2 Alternative Distribution Channels of Food in Poland – Wacław Szymanowski
    • In the globalization of future economic world the substantial position will play the electronic market and agri-food business. The alternative channels of the food distribution in the article were presented. In the article the main notions of electronic market, e-business and e-commerce were described. The segments of electronic business that have substantial position in food distribution (B2B – Business to Business, B2C – Business to Customers, C2C – Customers to Customers) were presented. The similarities and differences between e’commerce and traditional agri-food trade from the point of view of producers and customers were described.

  • 8 Influence of International Corporations on Employment and Wages in Polish Food Industry – Piotr Chechelski
    • The attempt was made to evaluate the influence of international corporations on employment and wages in the Polish food industry. Both positive and negative aspects have been presented in connection with the share of international corporations in production of particular branches. Results show that the influence is significant and variable.

    • Cereal production and processing in Poland is featured with a weak upward tendency. On the other hand the production and processing of rape seed in recent years is growing very fast. Acceleration in the development of these sectors is up to the scope and stability of the support for the bio-fuel producers as well as up to a need for improvement in agriculture, including the use of GMO food and stability of economic conditions of cereal production.

    • Decrease stocks of fossil fuels cause increase interest with renewable energy, including biomass, biofuel, biogas or geothermal energy. Growth of share of renewable fuels in the energy balance causes improvement in efficiency use and save natural energetic sources, better condition of environment and quality of life.

  • 24 Present-day Storage of Cereal Grain – Lesław Janowicz
    • Grain storage consists of sequential treatments, to protect grain against unfavorable processes causing the quality loss. The grain treatments ensure quality standards, important for further processing of the grain. The contemporary storage site and the storage technology have to consider threats of the increase of biological and enzymatic activities in the grain mass. The consequence of those processes can be the mass decline, the loss of sprouting abilities, the grain overheating, a gluten breakdown, a mold growth, the grain decay and infestation, odors arising and intensified enzyme activity causing the grain quality loss.

  • 28 Bioactive Food Ingredients Supporting Weight Reduction. Part I – Bożena Waszkiewicz-Robak, Franciszek Świderski, Piotr Serafin
    • The bioactive substances used in preparations supporting weight reduction are offered in a diversified form: as dietary supplements or food products of special dietary appropriation. The study has characterized the assortment of these preparations on the Polish market and assessed consumers’ knowledge about them. Women showed a greater knowledge in this field. The most popular preparations used in weight reduction among the Polish society are: red and green tea, chromium preparations and L-carnitine. The thesis also presents positive and negative aspects of such treatments.

  • 32 Carotenoids and Their Biological Activity – Arkadiusz Szterk, Piotr P. Lewicki
    • Carotenoids are orange-red dyes which are widely distributed in nature. They are added to many foods products, beverages and feeding staff as natural extracts or synthetic compounds. The carotenoids are the main source of vitamin A. Moreover, carotenoids support a lot of biological process in living organisms. Carotenoids protect organism against reactive oxygen species and radicals, e.g. oxidative stress, because they are strong antioxidants. Hence, carotenoids added to food as colouring matter serve also as important physiological mediators and influence health of man.

  • 35 Food Allergens of Plant Origin – Agata Szymkiewicz
    • Food products as peanuts, soy, nuts or wheat have the strongest allergenic properties. They may cause anaphylaxis or even death, when people sensitive to those allergens eat them. Many products contain compounds (like proteins) with very similar chemical structure, what can be the reason to occur cross reactivity among allergens from different sources. In the study short characteristic of major food allergens from plants was presented.

  • 38 Genetically Modified Food – Legislative Demands and Food Safety Systems – Zbigniew Oczadły
    • Modern biotechnology achievements such as genetically modified organisms (GMO) and food that is manufactured of them rise much controversy. Law regulations currently obligating in that range enable to control the GMO brought onto the market and make possible to identify it at each stage of processing and distribution. The law regulations obligate all entities bringing GMOs onto the market to mark such products adequately. Supermarket chains attach great importance to the GMOs. Demands of the supervision are detaily presented in BRC and IFS standards. Each enterprise that runs a production with GMOs must create a system minimizing the possibility of GMO-free product contamination with GMO-containing products.
