    • An upward tendency in relative food prices has been observed in Poland since 2004. Conducted analysis of prices and fundamentals of main agricultural markets points out that food products are a main factor of inflation also in 2009. Major price rises are expected in the case of pork and swine fats, poultry, fish, sugar and eggs.

    • In the present decade, the production and the consumption of non-alcoholic beverages showed a regular increasing tendency. The fastest pace of growth concerns the production and consumption of drinking water in unit packaging. An improvement in consumers’ financial situation and a insignificant growth in retail prices of non-alcoholic beverages (resulting mainly from growing efficiency of operating of the sector participants), had a positive influence on the consumption of non-alcoholic beverages. In the years 2009-2010 the pace of growth of the consumption, and thus the production, will be considerably lower than that in the previous years. It will result from a slowdown in the growth of consumer income.

    • Stability of carotenoids varies widely in food. The unsaturated nature of carotenoids makes them susceptible to oxidation and isomerization. The stability of carotenoids upon food processing depend on: nature of carotenoids chemical structure, sort of carotenoid-containg foods, environment especially: temperature and time of food processing, light, pH, air and presence of heavy metals. Understanding of the influence of those parameters and choice of the suitable food processing ensures good properties and quality of the final products

    • In the article general characteristic of tomatoes, chemical composition and their beneficial properties are described. Tomatoes are valuable source of vitamins and minerals, as well as are characterized by low energy value. The most valuable component of tomatoes is lycopene, biologically active antioxidant. The main emphasis was put on the positive role of lycopene against heart and neoplastic diseases. KEY WORDS: tomatoes, lycopene, carotenoids
  • 30 Packaging of Minimally Processed Fruits and Vegetables in Modified Atmosphere – Elżbieta Radziejewska-Kubzdela, Róża Biegańska-Marecik
    • Modified atmosphere with reduced oxygen content and elevated content of carbon dioxide is commonly used in packaging of minimally processed fruits and vegetables. At inappropriately selected packaging and storage conditions there is a risk of the formation of anaerobic conditions. This leads to a deterioration of sensory and microbiological quality of the product. The article presents an alternative method using atmosphere with high oxygen content in packaging of minimally processed fruits and vegetables. Its effect on physiological, biochemical processes and microbiological changes in tissue of stored products are presented. Moreover, directions of studies on wider application of this packaging method are also presented.

  • 34 Alicyclobacillus acidoterrestris – Still Inevitable Problem in Juice Industry – Alina Kunicka-Styczyńska
    • Bacteria Alicyclobacilli are an integral component of fruit micro-flora. Alicyclobacillus acidoterrestris can have unfavourable influence on the taste of products. In this article the presence of this bacteria in industrial processes of concentrated fruit juice production was described. A few chosen procedures of Alicyclobaclillus spp. detection and confirmation were given. Some key factors limiting the development of A. acidoterrestris in juice were characterized. The elimination of bacterial endospores or even their substantial reduction may be reached by multidirectional action of two or three factors described above.

  • 38 Amendments to the Act on Registration and Protection of Names and Designations of Agricultural Products, Foodstuffs and Traditional Products – Wojciech Sawicki
    • At the beginning of 2009 the Act of 24 October 2008 about changing the Act on Registration and Protection of Names and Designations of Agricultural Products and Foodstuffs as well as Traditional Products was legislated (DzU 2008, No. 216, item 1368). Significant changes include the range of registration and protection of names of agricultural products and foodstuffs as protected. Designations of Origin, Protected Geographical Indication, and Traditional Specialty Guaranteed. Moreover, issues of compliance of production process of agricultural products and foodstuffs. The Act also amended the Act of 18 October 2006 on Production of Spirit Drinks and on Registration and Protection of Geographical Indication of Spirit Drinks.

  • 40 GMO Food – Legal Aspects – Iwona Wrześniewska-Wal
    • At one side GMO is well acclaimed by the scientist and rise hope as the solution for many problems from the following areas: medicine, agriculture and environment protection. On the other side there are many reservations and concerns for GMO safety, whether its development is a threat for the human safety and environment. Bearing in mind those reservations European Commission decided to again assay safety of regulations discussed in this paper and concerning marketing of GMO food. Report regarding this mater should be finalized in January 2010.
