  • 2 Global Dairy Market Versus Polish Dairy Sector – Jadwiga Seremak-Bulge
    • Persisting surpluses on the domestic market makes the condition of Polish dairy sector more and more reliable on the situation on the world market. A decline in the world prices resulted in a deterioration of financial standing of Polish dairy industry in the first half of 2012. Since milk processing and production of dairy products considerably increased, the deterioration was caused primarily by declining producer prices. However, the crisis scenario observed over the period of 2008-2009 is unlikely to repeat. This time the situation of the world markets is different. First of all, there was a substantial rise in the production costs and prices of raw milk in New Zealand and developing countries in the Latin America which led to an improvement in competitiveness of the dairy sector in the EU, including Poland.

  • 8 Foodstuffs for Particular Uses – the Proposal of the Change in EU – Katarzyna Stoś
    • In 2011, the European Commission submitted a proposal for a Regulation of the European Parliament and of the Council on food intended for infants and young children and on food for special medical purposes. The proposal abolishes the concept of dietetic foods and provides for a new framework establishing general provisions only for a limited number of defined categories of food that are considered as essential for certain vulnerable groups of the population. The article focuses on the existing provisions for dietetic foods and on the proposal of the European Commission.

    • The quality of food has a crucial impact on the human health. A suitable diet rich in vegetables and fruits, that are abundant in natural antioxidants, can prevent the civilization diseases. Due to this property, the phenolic compounds contribute to the reduced risk of heart attacks and cancer disease and are helpful in maintaining good health and wellbeing. Food supplementation is the cheapest and most effective way of improving the nutritional and pro-health value of foodstuff. Nowadays, an increasing assortment of innovative, health-oriented products can be observed on the trade market. Top-growing group of products enriched with phenolic compounds includes beverages due to the easiness of their consumption and simple basic technology.

    • The article presents the issues connected with the control of microbiological, chemical and physical hazards in the dairy industry. The attention is paid to the crucial importance of the implementation of prerequisite programs (Good Hygiene Practices and Good Production Practices) during food safety assurance and the success of the operation of the HACCP system. There were indicated the most frequently used control measures occurring in the production of the dairy products (such as temperature, time, pH, metal detection) and their importance for the control of the identified hazards. The difference between the control measures and the criteria for the verification and confirmation of the effectiveness of actions is indicated. There were quoted the basic requirements of food safety legislation and the detailed provisions obligatory during the acquisition and processing of cow milk.

    • Deposit formation in milk processing plants is the main cause of a progressive decline in their efficiency and performance. Milk deposits are poor thermal conductors and restrict both heat transfer and fluid flow. In the work, factors involved in process of milk deposit formation, as influenced by heat treatment in heat exchangers were discussed. The formed deposit was characterized and their composition and mechanism of formation on hot surfaces devices was described.

  • 34 Methods of Detection and Determination of GMO. Part II Immunodiagnostic Techniques – Marta Słowianek
    • The law regulations requiring mandatory labelling of GMO-containing food have contributed to the development of reliable and sensitive methods for its detection. This paper focuses on immunodiagnostic methods, ideal for quality and quantity analysis of GMO food such us ELISA, LFA, Western Blot. The review highlights their advantages and drawbacks and limits of detection for many food products analyzed with their help. This article describes also the alternative approaches such as NIRS, which are efficient for detection of unknown genetic modification in food. Finally, strengths and weaknesses of immunodiagnostic methods and those ones, based on DNA analysis, are compared.

    • Polish law expressly allows the application of comparative advertising. Nevertheless, the comparative advertising needs to meet many criteria in order to be admissible, therefore Polish entrepreneurs are reluctant to use this particular tool. The article explains the conditions required for admissible comparative advertising, giving the examples of admissible and inadmissible advertisements.

  • 45 Can we Afford to Waste Food? – Bohdan Achremowicz
    • The problem of food wastage concerns the consumers (generating 42% loss), manufacturers (39%) and salesmen (15%). In the EU, food losses equal to 89 million tons (in Poland – 9 mln) per year may be observed. The European Parliament has intended to restrict the annual food aid by 60 million EURO. The resolution on strengthening the operations to stop the food waste has been also undertaken. The year 2014 is to be declared the European Year against food wastage.
